I'm a big coffee fan, and have tried a lot of different methods... automatic drip machines (at least 5 different manufacturers), french press, aero press, among others. The Chemex makes the best cup hands down. It's simple to use and easy to clean. You can experiment with the grind coarseness, water temperature, brewing speed, grounds to water ratio, etc, until you have it just like you want it. The process of brewing in the Chemex is relaxing and becomes part of the coffee routine. The smell once the coffee begins to bloom is amazing and fills the kitchen.

The best advice that I've found and experimented with to date is:
- pre-rinse the filters / pre-heat the brewer - once the water is boiling, place the filter and pour just some water around to rinse the filter and pre-heat the Chemex, then drain that water, add the grounds, and begin. This makes the coffee taste better, and also the filter seems to work better.
- use quality filtered water - a lot of people forget how important the water is... bad tasting water can ruin a great cup of coffee.
- use quality beans - find a local coffee shop that roasts or sells fresh beans and pick your favorite type.
- invest in a good grinder - coffee doesn't stay fresh for long after grinding. Buy your beans whole and invest in a good burr grinder. Conical burr grinders, like the Capresso 560.01 Infinity Burr Grinder, Black work best. The quality of the grind is also important to a great cup of coffee. I've found it best at a medium grind, but the Chemex will work from fine to course, depending on your likes.
- experiment - try different coffees, different amount of grounds, different grinds, etc. Have fun, and enjoy your coffee!

This gorgeous design dresses up a counter and makes coffee brewing a snap. Simply grind fresh coffee beans to medium-fine (like table salt) and gently pour a thin stream of water over the coffee for about 3.5 minutes. That's it! You'll find that brewing coffee in a Chemex is addictive, as smelling the fine aromas and watching the swirling foam during your brew is a wonderful prelude to the cup itself.

This particular design of the Chemex is wonderfully balanced and the wooden handle is easy to pour with. The heat-tempered glass is surprisingly sturdy and will last for years with proper care. It looks elegant too. In fact, this Chemex design won a place in the Museum of Modern Art!

Five stars for a perfectly designed coffee maker that is entrancing to use and beautiful to look at!

I took the plunge and instead of buying the simple manual drip devices that go over a cup; I bought two of these. One for me and one for a gift. I find myself looking forward to making coffee with this stellar carafe. This is not because I just drink a lot of coffee, but using this is actually fun! There is a sense of satisfaction you get after making some of the best coffee with one of these, this is something I don't get out of many things throughout the day.

I have avoided coffee for a few reasons but what really drove me away from coffee was my ever growing awareness of the constant dangers in relation to our diet and the entire food system. I have not had any success finding an automatic coffee maker that did not wreak cancer or endocrine disruptor to me. You may call me paranoid, but I call it careful. I would be disappointed in myself or any other self-respecting human to be willfully ignorant.

Anyways, the coffee that this makes... wait... no, it is actually me making the coffee, not the coffee maker... You can regulate how fast or slow it brews with not just more of less coffee grounds, but the manner you distribute the water across the grounds will also change the way the coffee turns out. Members of my family were claiming that it smelled like a coffee shop in the kitchen as I was making my first pot of coffee. The coffee is fantastic.

If you don't use the chemex filters, you can use regular ones, just use 2 or 3. Flatten it out then overlap a section making a cone approximately the size of the chemex coffee cone.

I am very excited about this buy and I can't wait to leave campus and make coffee for tomorrow morning!
